the cutest puppy meringue cookies - made with a classic vanilla meringue & dark chocolate ๐ถ
makes about 6-8 puppy meringue cookies
ingredients
meringue
2 egg whites (~60g), room temperature
pinch of kosher salt
1/8 tsp cream of tartar
1/2 cup granulated sugar (100g)
1/2 tsp vanilla extract (2g)
melted dark chocolate
tools
large mixing bowl or stand mixer bowl
hand mixer or stand mixer
spatula
piping bag with star tip
baking sheet + parchment paper
wire rack
steps
preheat oven to 225f (or your ovenโs lowest setting)
make the meringue: in a large mixing bowl/stand mixer bowl, combine 2 egg whites (about 60g), a pinch of kosher salt, & 1/8 tsp cream of tartar. with hand mixer/stand mixer, beat egg whites on medium-high speed for 1 minute. with the mixer still on, slowly add in 1/2 cup sugar, 1 tbsp of sugar at a time, until all incorporated. after about 5 minutes, add in a 1/2 tsp vanilla extract and whip until stiff peaks, it should be glossy and could take up to 10 minutes. do not overmix
put meringue into a large piping bag with star tip
pipe the puppy meringue cookies: pipe puppies onto the baking sheet with parchment paper - start by drawing a circle in a spiral motion - this will be the face. next, draw the ears on each side with an upwards direction. lastly, draw some hair on top by creating a squiggle or large oval
bake for about 1 hour in the oven. turn off the oven and let puppy meringue cookies cool in the oven for another 30 minutes, do not open the door. gently peel puppy meringue cookies off of parchment paper and transfer to a wire rack
decorate the puppy meringue cookies: using melted dark chocolate, give each puppy some eyes & nose
