makes about 11 flower lemon bars



ingredients

  • shortbread crust

    • 1/2 cup (1 stick, 113g) unsalted butter, room temperature

    • 1/4 cup (50g) granulated sugar

    • 1 cup (120g) all-purpose flour

    • a pinch of kosher salt

  • lemon filling

    • 1/2 cup (60g) all-purpose flour

    • 1 1/2 cups (300g) granulated sugar

    • zest of 2 lemons

    • 1/2 cup lemon juice (from about 2 lemons)

    • 3 eggs (about 150g), room temperature

  • topping

    • powdered sugar

  • medium mixing bowl or stand mixer bowl

  • whisk or hand mixer/stand mixer

  • flower-shaped baking mold, greased with non-stick cooking spray & placed on a baking sheet

  • wire rack

  • large bowl

  • mesh sieve

  • whisk

  • jug



steps

  1. preheat oven to 350f

  2. make the shortbread crust: in a stand mixer bowl, combine 1/2 cup (1 stick, 113g) butter & 1/4 cup (50g) sugar and beat with paddle attachment until light and creamy, about 2 minutes

  3. sift in 1 cup (120g) all-purpose flour & a pinch of kosher salt, then gently mix until a soft dough forms

  4. roughly divide shortbread dough into 11 pieces, about 25g each

  5. place a piece of dough in each flower mold and gently press to cover the surface

  6. bake for 15 mins - this is the parbake. in the meantime, prepare the lemon filling. after 15 minutes, let the shortbread crust cool on wire rack while finishing the lemon filling

  7. make the lemon filling: in a large mixing bowl, sift 1/2 cup (60g) all-purpose flour & 1 1/2 cups (300g) granulated sugar through a mesh sieve and combine with a whisk

  8. add in zest of 2 lemons & 1/2 cup lemon juice (from about 2 lemons), gently whisk to combine

  9. add in 3 eggs (about 150g) and gently whisk to combine

  10. assemble the flower lemon bars: evenly divide and pour lemon filling into each flower mold, just until full

  11. bake for about 20 minutes at 350f. lemon bars should just be set

  12. place on a wire rack and let cool completely for an hour or so. then gently remove flower lemon bars from mold

  13. generously dust powdered sugar on top of flower lemon bars

  14. enjoy!
