snowman brownies.

❄️ fudgy brownies with salted vanilla whipped cream and snowman marshmallows

note: the brownie recipe is from dessert person by claire saffitz & steps 1-7 are paraphrased from pages 139-140. makes 16 snowman brownies

ingredients

  • brownies

    • 1/4 cup (20g) dutch process cocoa powder

    • 1/4 cup (59g) boiling water

    • 5 oz (142g) semisweet chocolate, coarsely chopped

    • 6 tbsps (85g) unsalted butter, cut into pieces. + extra to grease pan

    • 1/4 cup (56g) neutral oil

    • 1/2 cup (100g) granulated sugar

    • 1/2 cup (100g) dark brown sugar

    • 1 large egg

    • 2 large egg yolks

    • 1 1/2 tsps vanilla extract

    • 3/4 cup (100g) all-purpose flour

    • 2 tbsps (10g) milk powder (optional)

    • 1 tsp (3g) kosher salt

    • 6 oz (170g) milk chocolate, coarsely chopped

  • salted vanilla whipped cream

    • 1 cup (240g) heavy cream

    • about 1/2 tsp (2g) kosher salt, or to taste

    • 1 1/2 tbsps (12g) powdered sugar

    • splash of vanilla extract

  • snowman marshmallows

    • 16 marshmallows

    • black & red writing icing

  • powdered sugar

  • 8x8” metal pan, lined with aluminum foil and greased with butter

  • large heatproof bowl

  • whisk

  • medium saucepan

  • silicone spatula

  • hand mixer/stand mixer

  • ice cream scoop (~3 tbsps)

  • mesh sieve



steps

  1. preheat oven to 350F

  2. make the brownie: in a large heatproof bowl, whisk cocoa powder & boiling water until smooth. add in semisweet chocolate, butter, & oil and set it over a medium saucepan filled with about 1 inch of simmering water. warm mixture gently until chocolate & butter are melted and mixture is smooth. remove bowl from heat and let cool until lukewarm

  3. Whisk granulated & brown sugars into chocolate mixture. add whole egg, egg yolks, & vanilla and whisk vigorously until mixture is thick, smooth, & glossy

  4. add flour, milk powder (optional), & salt and whisk slowly until everything is combined, then whisk more vigorously until batter is very thick

  5. add milk chocolate to batter and fold with a spatula. add batter into the prepared pan

  6. bake brownies until surface is shiny and puffed and the center is dry to the touch but still soft when pressed, 25-30 minutes

  7. Let brownies cool in the pan until they are no longer hot, about 1 hour. then chill until the bottom of the pan feels cold, about 1 hour

  8. make the salted vanilla whipped cream: in a large bowl, combine heavy cream, salt, powdered sugar, & vanilla extract. with a hand mixer/stand mixer, whip on medium-high speed until medium-stiff peaks. do not overmix

  9. Assemble the snowman brownies: cut brownies into 16 squares. using an ice cream scoop, top each square with salted vanilla whipped cream. draw a snowman face with black and red writing icing on a marshmallow, and place each marshmallow on top of salted vanilla whipped cream. dust with powdered sugar snow

  10. enjoy!

  • for easier brownies, skip steps 1-7 and use a box brownie mix. continue on with step 8
