lavender haze cake.

note: this is an earl grey cake with a lavender glaze. the earl grey cake recipe, steps 1-7, is bon appetit’s earl grey yogurt recipe. this recipe makes a small bundt/loaf cake

ingredients

  • earl grey cake

    • 1 cup (125g) all-purpose flour

    • 3/4 tsp kosher salt

    • 1/4 tsp baking powder

    • 1/4 tsp baking soda

    • 1 large egg

    • 1/2 cup + 2 tbsps (125g) granulated sugar

    • 1/2 cup (114g) whole milk yogurt

    • 1 1/2 tbsp earl grey tea leaves

    • 1 tsp vanilla extract

    • 1/2 cup (99g) vegetable oil

  • unsalted butter, to grease cake pan

  • all-purpose flour, to dust cake pan

  • lavender glaze

    • 1/2 cup powdered sugar

    • 1 tbsp heavy cream

    • 1 tbsp lavender syrup

    • about 1 tsp milk (adjust to liking)

    • purple gel food coloring (about 3-4 drops)

  • bundt cake (you can use a 6 or 7”)/small loaf pan

  • 2 medium bowls

  • whisk

  • cooling/baking rack

steps

  1. preheat oven to 325f and grease cake pan with butter. then dust with flour and tap out excess flour

  2. in a medium bowl, mix the dry ingredients - flour, salt, baking powder, & baking soda

  3. in a separate medium bowl, vigorously whisk egg with granulated sugar for 1 minute, until pale yellow and frothy. whisk in yogurt, earl grey tea leaves, & vanilla extract

  4. gradually stream in vegetable oil and whisk until incorporated

  5. pour batter into prepared cake pan

  6. bake in oven for about 40-45 minutes (time may vary depending on the pan). insert skewer or toothpick into the center, if it comes out clean, it is done

  7. let cake cool in pan for 15 minutes before taking it out. let cake cool completely before pouring on glaze

  8. make the lavender glaze: whisk powdered sugar, heavy cream, lavender syrup, & milk together until smooth. add in purple gel food coloring and whisk until well mixed (adjust food coloring to desired purple color)

  9. pour lavender glaze over cake. garnish with your toppings and let glaze set for a couple minutes before serving

  10. enjoy!

notes

  • make sure to use regular whole milk yogurt, not greek yogurt! using greek yogurt will make the cake dry and tart

  • adjust milk in the lavender glaze to your desired consistency
