fig cream sandwich & milk tea.

ingredients

  • 2 slices of white or milk bread

  • whipped cream

    • 1/2 cup heavy whipping cream

    • 1 tbsp powdered sugar

  • 2 figs (or any other small fruits you like)

  • honey earl grey milk tea earl

    • earl grey tea bag or tea leaves

    • honey

    • side of whole milk

tools

  • paring knife

  • whisk, hand mixer, or stand mixer

  • butter knife or offset spatula

  • plastic wrap

  • serrated knife

steps

  1. wash and pat dry figs. cut off fig stems

  2. cut off edges of bread for a cleaner look (optional)

  3. make the whipped cream: combine heavy cream & sugar, and whip until medium-stiff peaks. do not overmix

  4. assemble the cream sandwich: lay a piece of plastic wrap, big enough to wrap bread, then place a slice of bread on top of the plastic wrap

  5. put a layer of whipped cream on slice of bread

  6. place 2 figs on top of whipped cream layer

    • align the fig to the top-center of bread. the middle line is where you will cut

    • place another fig directly under the first one. figs should be aligned to the center

  7. put a generous layer of cream on top of figs, then spread cream and cover figs - make sure to get the sides

  8. place other slice of bread on top of the cream. gently press bread. gently but firmly wrap sandwich with plastic wrap - this will hold the sandwich together and give it a nice shape. you can mark a line with a permanent marker to indicate where to cut later

  9. chill the wrapped sandwich for at least 30 minutes in the fridge

  10. once chilled, cut wrapped sandwich down the middle. then gently open and unwrap

    • cut sandwich with the plastic wrap on, since that will keep the cream intact

  11. serve with honey earl grey milk tea

    • steep earl grey tea for a couple minutes, then add honey and milk to taste

  12. enjoy!

notes

  • in step 6, you will get a different fig cross-section depending on the direction you lay the fig. if you want a circle cross-section, lay the fig horizontally, so that the stem is horizontal. if you want a longer fig shaped cross-section, lay the fig vertically, so that the stem is vertical
