homemade ice cream for summer !!! inspired by cotton candy ice cream i had in nola a few weeks ago & the fact that cotton candy was my favorite ice cream flavor as a kid ๐Ÿฌ

makes 1 1/2 - 2 quarts cotton candy ice cream

ingredients

  • cotton candy ice cream base

    • 2 cups (480g) heavy cream

    • 1 1/2 cups (360g) whole milk

    • 1 cup (240ml) blue cotton candy syrup

    • 1/2 cup (100g) granulated sugar

    • pinch of kosher salt

    • blue gel food coloring, optional

  • sugar cones

  • pink cotton candy

  • large mixing bowl

  • whisk

  • ice cream maker

  • rubber spatula

  • ice cream container or deli container

steps

  1. make the cotton candy ice cream base:

    • in a large mixing bowl, combine 2 cups (480g) heavy cream, 1 1/2 cups (360g) whole milk, 1 cup (240ml) blue cotton candy syrup, 1/2 cup (100g) granulated sugar, & pinch of kosher salt. whisk until sugar is completely dissolved and everything is well combined. optional - add in a 1-2 drops of blue gel food coloring to achieve a brighter blue color

    • cover mixing bowl and chill for at least 2 hour or overnight

  2. churn the cotton candy ice cream:

    • once mixture has completely chilled, pour mixture into an ice cream maker (see notes below) and churn according to your machineโ€™s directions. it should take about 20-25 minutes

    • using a rubber spatula, transfer cotton candy ice cream to an ice cream container/deli container. cover tightly and freeze until ice cream is firm, at least 4 hours or overnight

  3. serve the cotton candy ice cream:

    • once ready to serve, place a couple scoops on a sugar cone and top with pink cotton candy

    • enjoy!



notes

  • if you have the time, i would recommend chilling the cotton candy ice cream base overnight. i only chilled mine for 2 hours, so it took me about 30 minutes to churn the ice cream. if you chill the base overnight, it should take about 20-25 minutes to churn the ice cream

  • before proceeding with step 4, make sure you have prepared your ice cream machine according to your machineโ€™s directions

  • do not overfill the ice cream maker with ice cream base ! this recipe was a bit too much for my ice cream maker, i ended up with about 3/4 cup of left over ice cream base
