cherry hand pies.

🍒 makes 10-12 heart-shaped hand pies

ingredients

  • 1 disc of alison roman’s the only pie crust (1/2 recipe)

    • 1 1/4 cups all-purpose flour (150g)

    • 1 tsp granulated sugar

    • 1/2 tsp kosher salt

    • 1/2 cup + 2 tbsps (10 tbsps) unsalted butter

    • 1 1/2 tsps apple cider or white vinegar

    • 2 tbsps ice water

  • cherry jam or other jam, about 1/2 cup

  • 1 egg, beaten for egg wash

  • demerara sugar

  • heart hand pie maker

  • spoon

  • paring knife

  • baking sheet pan with parchment paper

  • pastry brush



steps

  1. prepare 1 disc of alison roman’s the only pie crust (1/2 recipe)

  2. on a lightly floured surface, roll out pie dough, 1/8-1/4” thick, and first cut about 6-8 hearts. combine leftover dough and cut out more hearts. # of hearts depend on size of hearts, make sure to have pairs

  3. place heart dough on pie maker and fill with about 1 tbsp of cherry jam. brush edge of heart with egg wash and cover with another heart dough. then press to combine. cut two small slits on top of hand pies with a paring knife. repeat with remaining heart dough

  4. place hand pies on a baking sheet with parchment paper and brush with egg wash. sprinkle demerara sugar. chill in the fridge while preheating oven to 375f

  5. once oven is heated, bake for 20-25 minutes until hand pies are golden brown. caution: jam may ooze out and be extremely hot!

  6. let cool before serving

  7. enjoy!



notes

  • highly recommend making the pie dough the night before you make the hand pies. feel free to use store-bought pie dough for easier and cleaner looking hand pies

  • in step 3, you can use a cookie cutter instead of a pie maker. cut out shapes and place a tbsp or two of jam in the middle. brush the edges with egg wash and cover with another cut out dough. press edges together using a fork. cut two small slits on top of hand pies with a paring knife. continue with step 4
