my obligatory spring cake - a simple carrot cake with cream cheese frosting 🥕
makes a 8” carrot cake
ingredients
carrot cake
1 cup (120g) all-purpose flour
1 tsp baking soda
2 tsps cinnamon powder
pinch of kosher salt
3/4 cup (150g) olive oil
1 cup (~213g) dark brown sugar
2 large eggs
1 1/2 cup freshly grated carrots (from about 2-3 large carrots)
cream cheese frosting
8oz (1 block, 113g) cream cheese, room temperature
1/2 cup (1 stick, 113g) unsalted butter, room temperature
1 tsp vanilla extract
pinch of salt
3 cups (360g) powdered sugar

steps
make the carrot olive oil cake: preheat oven to 350f
in a medium mixing bowl, whisk together 1 cup (120g) all-purpose flour, 1 tsp baking soda, 2 tsps cinnamon, & a pinch of kosher salt
in a separate large mixing bowl, whisk together 3/4 cup (150g) olive oil, 1 cup (~213g) dark brown sugar, & 2 large eggs until smooth
sift in dry ingredients (step 2) to wet ingredients (step 3), whisk until just combined. add in 1 1/2 cup freshly grated carrots and gently fold
pour batter into prepared cake pan
bake for 35-40 minutes at 350f in the oven. insert a skewer in cake, if it comes out clean, it is done
let cake cool completely on a wire rack before frosting
make the cream cheese frosting: with a hand mixer or stand mixer, beat 8oz (1 block, 113g) cream cheese, 1/2 cup (1 stick, 113g) unsalted butter, 1 tsp vanilla extract, & a pinch of salt on medium speed, about 5 minutes. lower the speed and add powdered sugar, beat until smooth, about 1-2 minutes
frost the carrot olive oil cake: with a serrated knife, carefully cut carrot olive oil in half horizontally to create 2 layers. start assembling cake: on first layer of cake, spread a generous amount of cream cheese frosting. top with another layer of cake, then spread cream cheese frosting. cut into smaller slices
