makes 3 large almond croissants
ingredients
almond filling
3 plain butter croissants, use old croissants
1/2 cup (56g) sliced almonds, plus extra for topping
1 1/2 tsps (4g) all-purpose flour
2 1/2 tbsps (about 33g) brown sugar
pinch of kosher salt
1/4 cup (4 tbsps, 57g) unsalted butter
1 large egg (~50g)
1/2 tsp almond extract
maple syrup or simple syrup
powdered sugar, for topping
tools
food processor or blender
serrated knife
pastry brush
silicone spatula or spoon
baking sheet lined with parchment paper
wire rack
steps
preheat oven to 350F
make the almond filling: in a food processor, blend together 1/2 cup (56g) sliced almonds, 1 1/2 tsps (4g) all-purpose flour, 2 1/2 tbsps (about 33g) brown sugar, & a pinch of kosher salt until well combined
add in 1/4 cup (4 tbsps, 57g) unsalted butter and blend until a smooth paste forms
add 1 large egg (~50g) & 1/2 tsp almond extract, blend until everything is well blended
prepare the croissants: slice each croissant horizontally in half and using a pastry brush, brush some maple syrup or simple syrup on inside of croissant halves
spread a heaping 1 tbsp almond filling on the bottom half of the croissant and cover with the other half croissant
spread a heaping 1 1/2 tbsps almond filling on top of croissants and sprinkle some sliced almonds
bake for 18-20 minutes, until almond filling on top is cooked and golden brown
place on wire rack and let cool, then generously dust with powdered sugar
