makes 3 large almond croissants


ingredients

  • almond filling

    • 3 plain butter croissants, use old croissants

    • 1/2 cup (56g) sliced almonds, plus extra for topping

    • 1 1/2 tsps (4g) all-purpose flour

    • 2 1/2 tbsps (about 33g) brown sugar

    • pinch of kosher salt

    • 1/4 cup (4 tbsps, 57g) unsalted butter

    • 1 large egg (~50g)

    • 1/2 tsp almond extract

  • maple syrup or simple syrup

  • powdered sugar, for topping



tools

  • food processor or blender

  • serrated knife

  • pastry brush

  • silicone spatula or spoon

  • baking sheet lined with parchment paper

  • wire rack



steps

  1. preheat oven to 350F

  2. make the almond filling: in a food processor, blend together 1/2 cup (56g) sliced almonds, 1 1/2 tsps (4g) all-purpose flour, 2 1/2 tbsps (about 33g) brown sugar, & a pinch of kosher salt until well combined

  3. add in 1/4 cup (4 tbsps, 57g) unsalted butter and blend until a smooth paste forms

  4. add 1 large egg (~50g) & 1/2 tsp almond extract, blend until everything is well blended

  5. prepare the croissants: slice each croissant horizontally in half and using a pastry brush, brush some maple syrup or simple syrup on inside of croissant halves

  6. spread a heaping 1 tbsp almond filling on the bottom half of the croissant and cover with the other half croissant

  7. spread a heaping 1 1/2 tbsps almond filling on top of croissants and sprinkle some sliced almonds

  8. bake for 18-20 minutes, until almond filling on top is cooked and golden brown

  9. place on wire rack and let cool, then generously dust with powdered sugar

  10. enjoy!
